For many years, sisig has gained popularity more than any other local dish in the country, and it has many versions, depending on where it was cooked or prepared.

But did you know that sisig originated from Pampanga? And it was accidentally created by the late Lucia Cunanan, better known as Aling Lucing.

Aling Lucing accidentally burned a pig’s ear while grilling it.

She did not want it to be a waste, so she chopped the pig’s ear and put other ingredients like onions, salt, pepper, and vinegar.

Her invention became a hit, and customers, including American soldiers stationed in the Clark Airbase, would often order sisig at her restaurant located on the side of the railway.

Aling Lucing’s sisig is authentic Kapampangan: without the egg, mayonnaise, and chicharon.

It’s no surprise that sisig gained popularity across the country, and many celebrities like the famous Chef Anthony Bordain, love it.
